What do you do with your steak?

Historical capture recovered from the Wayback Machine · captured 2011-02-10 · 128 posts
For you home grillers, what do you do with your steaks? Marinade? Seasining? Sauce? el natural?

I typically just do kosher salt, pepper, and A1 when its done. Ive tried steak dust, doesnt do much for me. I do like Moores and Dales marinades...but rarely plan ahead well enough to bag them hours before hand.

GOOD QUESTION

I am currently making steak so I will take pictures and POST IN THIS THREAD

A1 pfffffff, way to ruin your steak. I use this steak dust stuff that super good, and make sure to get the grill super hot before I put them on so the outside caramelizes.
If you use A1 steak sauce, you are doing it wrong.

med rare or rare, some kosher salt and pepper.

i do it pretty simply

i rarely find myself thinking far enough ahead to properly marinade a steak
Ribeye - Salt and Pepper that's it
NY Strip - Marinade or Dry Rub
Sirloin - Pound and Marinade overnight
T-Bone - Marinade, or Dry Rub
Flank Steak - Pound Marinade, or Dry Rub

I never use that thing that sticks millions of holes in a steak, it doesnt tenderize it (well it does) but it also gives you millions of holes for the juice to run out of.

OK HERE WE GO

Step 0: You get a good cut of beef. I like NY strip. You may like ribeye. Bad cut of meat = bad steak. Get Prime grade if you can afford it if they even sell it at your store (i usually just stick with Choice)

Wait, back up. Step -1. Get beef that isn't injected with shit. That includes what they typically sell at Wal-Mart/etc. If it says "contains up to xx% added water/solution" just put it down.

Step 1: Kosher salt and freshly cracked pepper. Be liberal (sorry snake). Let it sit for 5-10 mins.

Step 2: Heat up the pan. You can either rub a bit of olive oil on the steak or just put it in the pan (not too much, just enough to lightly coat it). Yes that's a non-stick pan. I don't feel like spending 30 minutes cleaning a cast-iron skillet and this gets the job just fine. You don't need to go crazy with the heat.

Step 3: Put the steak in the pan and cook on side A. If you see (excessive) smoke your heat is too high. If you like your steak rare, have the heat higher. If you like the steak medium, have the heat a bit lower. If you like the steak well-done, eat some chicken. Controlling the temperature will keep the inside cooking at an appropriate rate compared to the browning of the outside. Most people say to sear both sides quickly and finish it in the oven but I'm not those people.

Step 4: Flip to side B and cook until it's at the desired doneness.

Step 5: Rest the steak for as long as you can resist the urge to cut in. If you cut into it right away you'll lose all the juices to the plate.

Step 6: Serve and eat. No sauce needed. I like to serve mine with a little salad.

At work, I will take some cube steak or some kind of sirloin and I cut them in little pieces. I add some garlic, salt and I use the steamer we have at work to cook shit for customers. I then take the spicy mayo the sushi guy uses which is made up of mayo, chili sauce and peanut oil. I squirt some of that shit on it and a little eel sauce which is like a thick teriyaki sauce, mix it up and eat it.......yum fucking yum!!!

I have a 4 burner grill, no need to pan fry.

I make my own BBQ sauce and let it sit on the steak for about 20 or 30 mins while it gets up to room temp, hit it with some salt/pepper, grill, and paint it up with more BBQ sauce just before I pull it off the grill.

I usually just make a few gallons of BBQ sauce and freeze bags of it, it turns to jelly in the freezer and you can just thaw out what you need each time cause its easy to scoop.

Coarse sea salt and freshly cracked black pepper. If I'm pan frying I use olive oil in the pan. If I'm grilling I rub the steak with some olive oil. I think the oil helps build a nice crust on the steak and locks in the flavor.

I can send you a base recipe to work off of, I just mess around with that and add different things.

Garlic/Bacon

Cocoa/Coffee

Pineapple/Vinegar (better than it sounds on ribs!)

But right now... I've got chop meat in the frig that needs to be made into chilli tonight, so I'll type it up tomorrow night.

Where do I email it to?

I either use Stubbs marinade, or the Jack Daniels EZ marinade.

There is a really nice piece off the top butt (sirloin)

We call it the sirloin filet and it's more tender than the strip or the ribeye

Don't forget the Chuck Eye cut.

Yeah, thats a good steak but I will take the Sirloin Filet or a Sirloin Tri-tip over a Chuck-eye any day.... much more leaner and more tender(or can be if you cook it right). The Chuck-eye steak is a by product of another piece of meat. In other words, when I cut short ribs, I can make flanken ribs bone-in from the end of it but I can only get a few. I will get alot more short ribs. When I cut a shoulder clod, I get a few chuck eye off the 1st two ribs and then cut the rest for roasts, chuck steaks and stew meat. The chuck is one of the cheaper fattyer meats. The boneless chuck roast is a great piece of meat to cook for a long time. I liken the chuck roast to a boston butt or pulled pork. It's very tender when you cook it for a long time. But it's still very fatty. It's all relative though. These days, we get most of our meats processed and marketed to a certain point. So I only know how to market those meats as oppossed to the old days when a REAL butcher could strip down and market a cow from head to toe.

Roasted garlic purre, mixed with some fresh chopped rosemary, salt & pepper. Marinate this for at least a day.

i can do that here in quite a shitload of places within walking distance from my place....it's one of the pleasures of living here, if I didnt exploit that I would be a total dumbass...so I exploit it, I order special cuts, different variety of animals (birds) either wild game or farm raised, can order, for example, turkey one week in advance, asking for spceific weight and i could buy the thing clean and ready or I can buy it just dead and i do the rest,

fish....it's a fish counter, they clean them in front of you, cut it however you want,

meats same thing, it's amazing, all in a market.

when i go, i always drop $100-$150 before I leave, and that;s just for my family, no party or nothing...and all consumed within days, nothing get frozen.

i have a hard on.

Some people have to resort to this. We all can't have grills at our homes. :[

Besides I got yelled at over the summer for putting a burn barrel on my porch. >.<

flickr
WD, at least purchase a small countertop oven, like a toaster oven with heat setting, u can cook the meat on the grill portion in there, with the pan collecting the juices below,

hell, u can even buy a countertop grill thingy, panfry is just worthy of a beating.

Not entirely sure yet, hopefully soon. Probably coming for a visit this month.
Nothing wrong with pan frying a steak. The best steaks are done in a cast iron skillet.

Pan fry a steak in a iron skillet is the fastest & best way to seal in all the juices & flavors of the steak. I love to grill but honestly you lose most of the steaks natural flavor & juices from grilling.

That sounds more like a recipe for a grease fire in your kitchen than a tasty steak.
I also want Cobalt's bbq sauce recipe.

That said, I think the only way to ruin a good steak is to put bbq sauce on it. Sometimes maybe a light rub, some montreal steak spice, but a nice prime rib or rib eye, bout an inch thick, mmm, with that marble just salt and pepper does it. Rare, but if there is enough fat you can get away with medium rare.
