make sure the demo is in your sof2\base\mp\demos folder
then open up sof2, hit ~ to bring down the console, and type:
/demo nameOfThatDemo
then hit ENTER. It'll fire up and u can watch it. Now while ur watching it you can't hit any keys or click your mouse or it'll quit out of the demo. You can use the F1-F12 keys, I have some bound to fast forward the demo (/timescale 5 10 20 whatever).
